This Chicken Adobo is a Filipino comfort food classic that's simple to make yet packed with rich, bold flavors. the chicken is braised in a savory, tangy, and slightly sweet sauce infused with garlic, black peppercorns, and bay leaves, making it incredibly flavorful and tender. It's one of those dishes that somehow tastes even better the next day, so don't be surprised if you find yourself reaching for extra rice! With just a few basic ingredients and minimal effort, you can make a dish that's comforting, satisfying, and full of flavor in every bite. CHICKEN ADOBO Serves 2-3 INGREDIENTS 500g Chicken thighs and legs, bone-in ¼ cup (60g) regular Soy Sauce (Filipino brands like Silver Swan works best) ⅓ cup (75g) Red Cane Vinegar 6 cloves Garlic, crushed 1 ½ tablespoons (18g) Brown Sugar 2 teaspoons Whole Black Peppercorns 2 pieces Bay Leaves, dried 1 tablespoon Oil (for searing) ⅛ cup (30ml) Water Chopped Green Onions (for garnish) Best served with rice. Enjoy! Watch the video for full step-by-step. TIPS • Marination Time: Marinate the chicken for 30 minutes to 1 hour. Longer marination can make the flavor too strong and affect the texture of the chicken. • Boil the Vinegar First: Let the vinegar boil uncovered for 3–5 minutes before stirring to avoid a sharp, raw taste in the sauce. • Simmer Covered, Then Reduce: Keep it covered during the first simmer to make the chicken tender. Uncover for the last few minutes to reduce and thicken the sauce. • Flavor Tip: Adobo tastes even better the next day as the flavors continue to deepen—perfect for leftovers! Thank you for watching!
